Sweet Potato, Apple and Celery Waldorf Salad

Skip to recipeOne bite of this salad and it’ll taste like fall in your mouth. The inspiration behind Sweet Potato, Apple and Celery Waldorf Salad was my love for sweet potatoes. They are a nutritious superfood that can be used in so many ways.
Most people may think of sweet dishes when they hear sweet potato, although in this salad it is actually uncooked, giving it a different taste and eating experience. Don’t let that scare you. It’s crunchy and flavorful. Combined with the apple, celery and nuts, this dish becomes a modern bright salad, reminiscent of a Waldorf.
Prepare the Ingredients
First, peel and julienne one small sweet potato and one Honeycrisp apple into thin matchsticks using a 7″ Santoku. You will want to be sure you cut the sweet potato and apple the same size. This will help give the salad a more consistent and appealing look.
Next, shred the kale using the 7-3/4″ Petite Slicer.
Last, slice the green onion on the bias using a 4″ Vegetable Knife. “On the bias” means to cut on the diagonal and helps make the dish look more aesthetically pleasing.
Make the Dressing
A classic Waldorf salad has creamy dressing, although in this version, we made a vinaigrette.
In a small bowl, using a Mix-Stir, whisk together lemon juice, apple cider vinegar and the spices. Whisk in the olive oil and the mayonnaise until smooth.
The apple cider vinegar really brings everything together in this dressing, and I expect you’ll be pleasantly surprised by it.
Make the Salad
In a separate bowl from the dressing, combine the sweet potato, apple, celery, kale, scallions, pecans and cilantro.
Drizzle the vinaigrette over the salad, toss and season to taste with additional P.S. Flavor!™ Creole Kitchen or kosher salt and pepper.
One thing I love most about this Sweet Potato, Apple and Celery Waldorf Salad is that you can make it in advance. If you do, wait to add the kale until serving so that you get the full crunch and vibrant color. It is so easy to throw together, you will find yourself making it time and time again this fall. Ingredients
- 2 tablespoons lemon juice
- 2 tablespoons apple cider vinegar
- 1 tablespoon P.S. Flavor!™ Citrus Spice seasoning or zest of one lemon
- 1/2 teaspoon P.S. Flavor!™ Creole Kitchen seasoning or Creole seasoning of choice
- 1/2 teaspoon P.S. Flavor!™ Mai Chai seasoning or cinnamon
- 2 tablespoons extra-virgin olive oil
- 1 tablespoon mayonnaise
- 1 small sweet potato, peeled and julienned into thin matchsticks (about 1 cup)
- 1 Honeycrisp apple, julienned into thin matchsticks (about 1 cup)
- 1 stalk celery, julienned into thin matchsticks (about 1 cup)
- 1 cup shredded kale, massaged
- 2 scallions, thinly sliced on long bias
- 1/4 cup pecans, toasted
- 1/4 cup crumbled feta
- 1/4 cup packed fresh cilantro leaves
Directions
- In a small bowl, whisk together lemon juice, apple cider vinegar and spices. Whisk in olive oil and mayonnaise until smooth.
- In another bowl, combine sweet potato, apple, celery, kale, scallions, pecans, feta and cilantro.
- Drizzle dressing over salad, toss and season to taste with additional Creole Kitchen or kosher salt and pepper.
