Slow Cooker Pumpkin Chili

Ingredients

  • 1 pound ground turkey
  • 1 sweet onion, peeled and chopped
  • 1 small yellow bell pepper, seeded and chopped
  • 1 small red bell pepper, seeded and chopped
  • 1 15-ounce can solid-pack pumpkin
  • 1 14.5-ounce can diced tomatoes, undrained
  • 1 4.5-ounce can diced green chilies, undrained
  • 4 1/2 teaspoons chili powder
  • 1/4 teaspoon garlic salt
  • 1/4 teaspoon onion powder
  • 1/4 teaspoon black pepper

Directions

  1. Brown the turkey in a large skillet over medium heat for 5 minutes, breaking apart the meat as it cooks.
  2. Drain and transfer to a lightly greased slow cooker or, for easy clean up, line the cooker with a slow cooker bag.
  3. Stir in the onions, peppers, pumpkin, tomatoes with juice, green chilies, chili powder, garlic salt, onion powder, and black pepper.
  4. Cover and cook on low for 8 hours.
  5. Serve with a garnish of sour cream and chives (optional).
