Easy Jambalaya

- 3 tablespoons olive oil
- 1 cup chopped onion
- 2 garlic cloves, finely minced
- 1/2 cup chopped green bell pepper
- 1/2 cup chopped red bell pepper
- 1/2 cup chopped celery
- 3 cups chicken stock
- 1 cup uncooked medium-grain rice
- 1 teaspoon salt
- 1/4 teaspoon cayenne pepper
- 1/2 pound medium shrimp, peeled and de-veined
- 1/2 pound pre-cooked sausage, sliced
- 2 medium scallion, sliced
Directions
- Heat oil in a large nonstick skillet over medium-high heat. Add onion and garlic; sauté 4 minutes. Add peppers, and celery; sauté 6 minutes.
- Stir in broth, rice, and salt, and bring to a boil. Cover, reduce heat, and simmer for 15 minutes. Add sausage.
- If rice looks dry add a little more broth. Stir well. Layer shrimp over top of rice; cook 4 minutes or until shrimp are bright pink. Garnish with sliced scallion.
