Heather Chandler's Mango Salsa

Ingredients
- 6 large mangos (2 of which are a bit green), peeled and diced
- 1 large bunch of cilantro leaves, no stems
- 1 red onion, diced
- 3 jalapeno peppers (without seeds), diced
- 1 large red pepper, diced
- 1 can pineapple tidbits in natural juice
- Juice of 3 limes
Directions
- Combine all the ingredients in a large bowl. Let the mixture sit in the refrigerator for an hour to give it time for all the flavors to combine.
- If the mixture is not sweet enough for you, you can add a bit of sugar or Splenda. If it is too sweet, add a bit more lime juice. This will all depend on the sweetness of your fruit.
- The salsa will stay fresh in a refrigerator for several days, but as a rule of thumb it is easy enough to make it fresh when you need it.
