Cutco owner Heather Chandler provided us with this sweeter salsa using fresh mangos. Heather said, “This salsa goes real well over meat and fish too. The possibilities are only as limited as your imagination. Experiment and create your own signature recipes.”

Ingredients

  • 6 large mangos (2 of which are a bit green), peeled and diced
  • 1 large bunch of cilantro leaves, no stems
  • 1 red onion, diced
  • 3 jalapeno peppers (without seeds), diced
  • 1 large red pepper, diced
  • 1 can pineapple tidbits in natural juice
  • Juice of 3 limes

Directions

  1. Combine all the ingredients in a large bowl. Let the mixture sit in the refrigerator for an hour to give it time for all the flavors to combine.
  2. If the mixture is not sweet enough for you, you can add a bit of sugar or Splenda. If it is too sweet, add a bit more lime juice. This will all depend on the sweetness of your fruit.
  3. The salsa will stay fresh in a refrigerator for several days, but as a rule of thumb it is easy enough to make it fresh when you need it.
