Coffee Roasted Turkey

Ingredients

  • 1 medium (12-14 pounds) turkey
  • 1 carrot (chopped)
  • 1 celery stalk (chopped)
  • 1 medium onion (cut in quarters)
  • 4-5 parsley sprigs (chopped)
  • 2 tablespoons freshly ground coffee
  • 1 tablespoon kosher salt
  • 1/2 tablespoon ground black pepper
  • Some oil to moisten

Directions

  1. Fill cavity with carrots, celery, parsley and onions.
  2. Mix coffee, salt and pepper, and rub onto the turkey.
  3. Brush with oil and roast at 350°F oven for 2-3 hours.
  4. Remove and rest for 20 minutes. Carve.
