I wanted a St. Patrick’s Day recipe that stood apart from what’s expected – something that was a nod to my Irish roots but brought a fun twist to the table. With air fryers being all the rage (and for good reason), this recipe quickly became a no-brainer. Sometimes you just want an appetizer that doesn’t involve heating up the whole kitchen and these Air Fryer Reuben Egg Rolls deliver.
They come together with just five ingredients and the process is wonderfully simple. It’s corned beef, Swiss cheese and sauerkraut rolled up into an egg roll wrapper and air fried. Served with cool, tangy Thousand Island dressing for dipping? Yes, please! All you need extra is a little water to seal the rolls and a spritz of oil before frying. It’s St. Patrick’s Day comfort food with an Asian-inspired twist – and it’s downright delicious.
Easy Prep and Assembly
Save yourself some time and grab deli-sliced corned beef from the grocery store. The Santoku-Style Trimmer makes quick work of cutting it into thin strips. If corned beef isn’t your favorite or if your store happens to be out, pastrami works great in this as well.
Next use the Traditional Cheese Knife to slice the Swiss cheese into strips to match the width of the strips of corned beef.
Before assembling the rolls, drain the sauerkraut. Place it in a bowl and gently press down on it with a paper towel to dry.
You want the sauerkraut to be semi-dry and loose, almost like shredded coconut. If it’s too wet the egg rolls will turn soggy, and you want that perfect crunch.
Now for the fun part – filling up the wrappers. Lay out an egg roll wrapper so that it looks like a diamond in front of you, place a couple of strips of corned beef and Swiss cheese in the center, then top with a tablespoon of sauerkraut. Be careful not to overstuff these as it makes rolling them up difficult and can lead to leaks while cooking.
Dip your fingers in water and lightly trace around the edges of the wrapper. Fold the end closest to you over the filling, tuck the sides in snugly, then roll it up tightly to seal. Set each finished roll aside and repeat the “fold, squeeze and roll” routine until all 10 are ready for frying.

Air-Fried Perfection
Lightly spray the egg rolls with oil and place them in the air fryer at 375 F for about eight minutes, flipping them halfway through to ensure an even, golden crisp. When they’re done, serve with some Thousand Island dressing for dipping.

Ingredients
- 1/2 pound of deli-sliced corned beef or deli pastrami, cut into thin strips
- 5 slices Swiss cheese, cut into thin strips
- 1 cup sauerkraut, drained and squeezed dry
- 10 egg roll wrappers
- Oil or nonstick spray, for coating
- Thousand Island dressing, for dipping
Directions
- Lay out an egg roll wrapper (so it looks like a diamond) on a clean surface then use your finger to brush all the outside edges of the wrapper with water. Place a few strips of corned beef in the center of the egg roll wrapper, top it with a few strips of Swiss cheese and a tablespoon of sauerkraut.
- Fold the bottom corner of the egg roll wrapper up and over the filling, then fold the left and right sides of the wrapper towards the center and then roll the filling over itself until the egg roll is completely sealed. Repeat with remaining ingredients.
- Spray the egg rolls with oil and add to the air fryer. Cook at 375 F for approximately 8 minutes, flipping the egg rolls halfway through the cooking process.
- Serve with the Thousand Island dressing
