I use this knife all the time...and not just for salmon. I use it to cut paper thin slices of ham and turkey for sandwiches and to cut perfectly shaped bite size pieces of feta cheese and mozzarella cheese from a block or ball of cheese. Salads and h'ors d'oeuvre and antipasto trays look so much nicer with smooth cut pieces. It's THE BEST for thin diagonal slices of salmon, flank steak and poached chicken breast and it easily removes the charred skin from any grilled fish. This knife is a basic kitchen necessity.
