Thyme Roasted Carrots

  • 3 pounds carrots, peeled and sliced lengthwise
  • 2 tablespoons fresh thyme, minced
  • 2 tablespoons olive oil
  • 1 tablespoon maple syrup
  • 1 teaspoon kosher salt


  1. Place two baking sheets in oven and heat to 400 F.
  2. In a large baking dish, combine carrots, thyme, olive oil, maple syrup and salt. Toss gently making sure to coat all of the carrots.
  3. Take baking sheets out of the oven and dump the carrots onto the baking sheets, making sure the carrots are in a single layer.
  4. Roast 20-25 minutes until tender.
  5. Serve immediately.
