Easy Pulled Chicken Chili

Ingredients

  • 1 pound boneless skinless chicken breast (whole)
  • 1 1/2 -2 cups of chicken stock
  • 1 teaspoon of liquid smoke
  • 1 can whole kernel corn (with juice)
  • 1 can fire roasted tomatoes (with juice)
  • 2 small cans of diced green chili (with juice)
  • 1 can black beans (without juice)
  • 1 can of red enchilada sauce
  • 4 tablespoons of jalapeno hot sauce
  • 1 teaspoon of granulated garlic
  • Salt to taste

Directions

  1. Add chicken and chicken stock to slow-cooker and slow simmer for 4 to 6 hours, until extremely tender. Pull the chicken apart using two forks. Add liquid smoke and then add corn, tomatoes, green chilis, black beans, enchilada sauce, jalapeno hot sauce, garlic and salt.

  2. Continue cooking in crockpot on high for about 2 hours, then reduce to low for about 2 more hours, or until ready to eat. Serve with sour cream and shredded smoked Gouda.
