Tortellini Salad Alla Maddalena

Ingredients

For the salad:

  • 1 14-ounce bag of cheese tortellini
  • 1 14-ounce bag of tri-color cheese tortellini
  • 1/4 cup banana peppers
  • 1/4 cup pickled onions
  • 1/4 cup roasted peppers
  • 1/2 cup pimento-stuffed olives
  • 8 ounces provolone cheese, diced
  • 2 thick slices of hot Soppressata, diced
  • 2 thick pieces of sweet Soppressata, diced
  • 1/2 inch thick cut of deli ham, diced
  • Salt and pepper, to taste

For the dressing:

  • 1/4 cup extra-virgin olive oil
  • 1/4 cup red wine vinegar
  • Fresh oregano, to taste
  • Salt and pepper, to taste

Directions

  1. In a large pot over high heat, bring water to a boil and add the tortellini. Cook according to package instructions, drain and let tortellini cool in refrigerator until chilled.
  2. Make your dressing by combining all ingredients into a separate bowl and whisk.
  3. In a large bowl, add the cooked and chilled tortellini.
  4. Top the tortellini with a little bit of the dressing to loosen.
  5. Add the rest of your ingredients, mix and enjoy!
