Ingredients

  • 1 can (15-ounce) black beans, drained and rinsed
  • 1 can (15-ounce) black eyed peas, drained and rinsed
  • 1 1/2 cups fresh corn
  • 2 Roma tomatoes diced
  • 1/2 cup red onion diced
  • 2 green peppers, diced
  • 1 jalapeņo, seeded and minced
  • 1 garlic clove, minced
  • 1/4 cup minced cilantro
  • 1 avocado, diced
  • Juice of one lime
  • Zest of one lime
  • 4 tablespoons olive oil
  • 2 tablespoons white wine vinegar
  • 1/2 teaspoon salt
  • Tortilla chips, for serving

Directions

  1. Place beans, black eyed peas, corn, tomatoes, onion, pepper, jalapeño, garlic, cilantro and avocado in a large mixing bowl.
  2. In a small bowl, whisk the lime juice, zest, olive oil, vinegar and salt.
  3. Pour the dressing over the ingredients and stir until combined.
  4. Cover and chill in the refrigerator one to two hours for flavors to blend.
  5. Serve the same day with tortilla chips.
