Pineapple And Mango Mojitos

Ingredients

  • 6 mint leaves
  • 5 limes, each chopped into pieces with rind on
  • 3/4 cup pineapple, cubed
  • 3/4 cup mango, cubed
  • 4 tablespoons granulated sugar
  • Ice
  • 10 ounces white rum
  • 14 ounces pineapple rum
  • 24 ounces club soda or sparkling water
  • 1 lime, sliced

Directions

  1. Bruise the mint leaves (avoid crushing the stem) with palm of hand.
  2. Place the mint leaves into a sturdy serving pitcher (thin glass could break when mixing everything together).
  3. Place the limes, pineapple and mango into the serving pitcher. Add the sugar.
  4. Place the muddler in the pitcher and press down with it lightly and give a few gentle twists. You should see the juice from the fruits squirting out. Don’t over muddle – you want your mint sprigs to remain intact and you should smell the mint but you do want your fruits to have most of their juice released (including the limes).
  5. Top the fruit mixture with ice, and then stir in the white rum, pineapple rum and sparkling water.
  6. Make sure everything is mixed well and pour into individual glasses for serving. Place a slice of lime on each glass for decoration.
