Pear and Raspberry Chai Baked Oats

Ingredients

  • 2 cups old fashioned rolled oats or protein oats
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 tablespoon P.S. Flavor!™ Mai Chai or 2 teaspoons cinnamon
  • 2 eggs
  • 3 cups 1% or 2% milk
  • 1/4 cup pure maple syrup or honey
  • 1/4 cup extra-virgin olive oil
  • 2 teaspoons pure vanilla extract or 1 tablespoon vanilla bean paste
  • 1 medium pear, diced
  • 1 cup raspberries

Directions

  1. Preheat oven to 350 F. Spray a 13 x 9-inch glass baking dish with nonstick spray and set aside.
  2. In a small bowl combine oats, baking powder, salt and spice. Set aside.
  3. In a large bowl whisk together eggs, milk, maple syrup, olive oil and vanilla extract. Add oat mixture to the wet ingredients and mix to combine. Fold in fruit.
  4. Transfer mixture to the prepared baking dish and bake until set, about 40 minutes. Let cool about 5 minutes before serving. Delicious hot or cold.
