Ingredients
- 2 cups old fashioned rolled oats or protein oats
- 1 teaspoon baking powder
- 1/2 teaspoon salt
- 1 tablespoon P.S. Flavor!™ Mai Chai or 2 teaspoons cinnamon
- 2 eggs
- 3 cups 1% or 2% milk
- 1/4 cup pure maple syrup or honey
- 1/4 cup extra-virgin olive oil
- 2 teaspoons pure vanilla extract or 1 tablespoon vanilla bean paste
- 1 medium pear, diced
- 1 cup raspberries
Directions
- Preheat oven to 350 F. Spray a 13 x 9-inch glass baking dish with nonstick spray and set aside.
- In a small bowl combine oats, baking powder, salt and spice. Set aside.
- In a large bowl whisk together eggs, milk, maple syrup, olive oil and vanilla extract. Add oat mixture to the wet ingredients and mix to combine. Fold in fruit.
- Transfer mixture to the prepared baking dish and bake until set, about 40 minutes. Let cool about 5 minutes before serving. Delicious hot or cold.
