Italian Sausage Garden Skillet Dinner

  • 1 tablespoon olive oil
  • 1 medium zucchini, diced
  • 1 small yellow squash, diced
  • 2 garlic cloves, minced
  • 1/2 teaspoon kosher salt
  • 1/4 teaspoon pepper
  • 3 Italian turkey sausage links, cooked and chopped
  • 1 cup golden sweet tomatoes
  • 3/4 cup grape tomatoes
  • 3 plum tomatoes, diced
  • 2/3 cup marinara sauce
  • 1/2 cup shredded mozzarella cheese
  • 1/4 cup shredded Parmesan cheese
  • 2 tablespoons chopped fresh basil
  • Salt and pepper, to taste


  1. In a skillet over medium heat, warm the olive oil. 
  2. Add the zucchini, yellow squash and garlic, and sprinkle with salt and pepper.
  3. Sauté for approximately 2 minutes and add the turkey sausage, all the tomatoes and the marinara sauce.
  4. Cook until the sweet and grape tomatoes begin to crack their skin, the zucchini and yellow squash are tender and everything is at the same temperature.
  5. Sprinkle both cheeses on top of the vegetable and meat mixture, placing a lid over the skillet to help melt the cheese, approximately 2 minutes.
  6. Once the cheese is melted, sprinkle the basil over the finished dish, add some additional salt and pepper if needed, and serve directly from the skillet.
