Grilled Fruit Crumble

Ingredients

  • Non-stick cooking spray
  • 6 medium, ripe peaches
  • 6 ripe plums
  • 1/3 cup granulated sugar
  • 1/8 teaspoon salt
  • 1/4 cup toasted, chopped pecans
  • 2 teaspoons brown sugar
  • 12 vanilla wafers, crushed
  • 2 tablespoons butter, melted
  • Whipped cream or vanilla ice cream

Directions

  1. Spray cold grill rack with non-stick cooking spray and preheat grill to medium-high heat.
  2. Cut each peach and plum in half and pit. Lightly coat fruit with cooking spray. Grill 3 minutes on each side or until grill marks appear. Remove from grill and cut each fruit into 4 wedges. Place in a large bowl and sprinkle with sugar and salt. Toss gently to coat. Let stand for 15 minutes.
  3. Put pecans, brown sugar and wafer crumbs in a medium bowl, stirring to combine. Drizzle with butter; toss well to combine.
  4. Divide fruit among 8 ramekins, jars or bowls. Drizzle with liquid from the fruit. Sprinkle each with the pecan mixture. Top with whipped cream or ice cream.
