Cutco's Ultimate Chopped Salad with Grilled Chicken

Ingredients

For Salad

  • 1 to 2 heads crisp romaine lettuce, chopped
  • 2 large roasted chicken breasts
  • 1/2 cup good blue cheese
  • 1 cup cherry tomatoes, sliced
  • 2 ripe avocadoes, diced
  • 1 small red onion, thinly sliced or 4 shallots
  • 1 large cucumber, diced

For Dressing

  • 1/3 cup rice wine vinegar
  • 1/2 cup olive oil
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • 1 teaspoon dried mustard
  • 1 teaspoon red pepper flakes (if you like it spicy) or to taste
  • 1 teaspoon sugar
  • 1 teaspoon salt

Directions

  1. Cut the romaine lettuce in half then chop.
  2. Place lettuce on large platter or in large serving bowl.
  3. Slice the chicken and place in one corner of salad. Continue to cover the top of the chopped lettuce with diced avocado, halved cherry tomatoes, the sliced onion or shallot, and diced cucumber.
  4. For the dressing, mix all ingredients in a small bowl and whisk together until well blended. Serve with chopped salad.
