Cobb Salad with Turkey, Squash & Avocado

Ingredients

  • 6 cups romaine or butterhead lettuce, chopped
  • 6 thick slices bacon, cooked crispy and diced
  • 1/2 cup pecan halves
  • 2 large hard boiled eggs, peeled and diced
  • 1 cup cooked butternut squash, diced
  • 2 whole avocados, sliced
  • 4 thick slices turkey, chopped (about 1/2 pound)

Directions

  1. Line a bowl or serving platter with lettuce. In small rows, arrange bacon, pecans, eggs, butternut squash, avocados and turkey. Serve with your favorite creamy dressing.
