Lemon Chicken

  • 1 whole chicken, cut into 8 pieces
  • 1/4 cup fresh lemon juice
  • 2 teaspoons cinnamon
  • 1 teaspoon allspice
  • Salt and pepper to taste


  1. Heat oven to 400 degrees F.
  2. Rinse chicken and break down into 8 pieces (breasts, thighs, drumsticks, wing drumettes, wing flats).
  3. Place chicken in a roasting pan, skinside up.
  4. Baste with lemon juice, sprinkle evenly with spices.
  5. Roast uncovered for 30 minutes and check temperature (cook to internal temperature of 160 degrees F). Cover chicken if it starts to over brown, until cooked to temperature.
