Buffalo Chicken Meatballs

Ingredients

  • 1 pound ground chicken
  • 3/4 cup breadcrumbs
  • 1 large egg
  • 1/2 teaspoon garlic powder
  • 4 green onions, sliced thin
  • Salt and pepper, to taste
  • 1 cup buffalo wing sauce
  • Makes about 24 meatballs

Directions

  1. Preheat oven to 400°F. Line baking sheet with parchment paper. In a large bowl, combine ground chicken, breadcrumbs, egg, garlic, green onions, salt and pepper and mix together until well incorporated.
  2. Form mixture into 1-1/4 to 1-1/2-inch meatballs, placing them on the prepared baking sheet.
  3. Bake for 4 to 5 minutes to brown. Place meatballs in a re-sealable plastic bag, add wing sauce and toss to coat. Pour meatballs and sauce in a slow cooker. Cover and cook on low for 2 hours. Serve with sides of extra wing sauce and blue cheese or ranch dressing, and celery sticks.
