Caramel Brie
Serving Size: 6
1 1/2 cups granulated sugar
1/2 cup water
1 cup heavy whipping cream
6 inch wheel of Brie cheese
2 cups caramel
1/2 cup toasted pecans, chopped

1. Combine sugar and water in a heavy bottom saucepan and place over high heat. Cook on high heat until water dissolves and sugar starts to turn a caramel shade. Remove from heat and add a small amount of whipping cream. Be very careful because caramel will bubble up quite rapidly. With a wooden spoon add remaining cream. Set aside and allow to cool.

2. Just prior to serving, place wheel of Brie on an oven-safe serving dish and place in oven at 350°. Bake until warm and soft to the touch (about 7 minutes). Remove from oven and cover with caramel sauce. Garnish with toasted chopped pecans. Serve with fresh crusty bread.
