Chicken Croissant
Serving Size: makes 4 servings
4 croissants
2 roasted, grilled or smoked chicken breasts, thinly sliced
salt and freshly ground pepper to taste
4 slices Swiss cheese
2 tomatoes, sliced
2 avocados, sliced
1 containers alfalfa sprouts

1. Slice croissants in half and spread each half with desired amount of mayonnaise. Place chicken on bottom half of each croissant. Season with salt and pepper.

2. Place slice of Swiss cheese on top of chicken. Place in toaster oven or under broiler until cheese begins to melt.

3. Season tomatoes and avocados with salt and freshly ground pepper. Place tomato and avocado slices on top of cheese.

4. Place sprouts in bowl. Add olive oil, lemon juice, salt and pepper. Toss until dressing is distributed throughout. Place sprouts on sandwich.

5. Add tops of croissants.
