1. In a medium bowl, combine eggs, sugar, vanilla and buttermilk. Whisk until well combined.
2. Add flour and baking powder and whisk.
3. Preheat oven to 400°F. Add 1 teaspoon vegetable oil each to two 7" cast iron or blue steel pans. Heat pans in oven until oil is smoking hot.
4. Add 1/6 of the batter to each pan and bake for 10 minutes. Remove from oven and repeat process until you have 6 pancakes. Serve with powdered sugar and raspberry butter.
5. Raspberry Butter- In a small bowl, combine powdered sugar and raspberries. Crush berries with the back of a fork. Add whipped butter and blend. Reserve at room temperature to serve with pancakes.
Fresh blackberries and raspberries make an excellent accompaniment.
