Low-Moisture Method: make sure the pan is the appropriate size for the food being prepared; foods cook best when they fill or nearly fill the pan. Select appropriate size cover for food being prepared; either the 11-1/2 Skillet Cover or the High Dome Baking Dish Cover. Only add water or liquid if the food being cooked does not contain enough moisture of its own. Water is necessary for preparing soups, dry cereals, rice and pasta. Cover pan, except in cases where foods require constant stirring. Cook on medium heat until steam escapes, then reduce to low heat. Do not peek - lift lid as little as possible to avoid steam escaping.
Slow cook meats, stews and vegetables; combine with the High Dome Baking Dish Cover to prepare corn on the cob.
