Hold the food to be pared with the fingers and thumb of one hand. Lay the Paring Knife handle across the fingers of other hand (palm up) with the cutting edge of the knife facing you. Allow your fingers to follow the curve of the handle. Place your thumb gently against the food to be pared. Begin cutting a thin layer of the food, using your thumb to rotate the food and guide the blade of the knife.
