Before registering for a good set of knives you should get your hands on them, Ms. Grey said. Does the knife feel comfortable? How does it cut? Are they well balanced? Durable?

When shopping around be sure to look for the following qualities in cutlery:
The blade – Sharpness is vital. Blades made of high-carbon, stain-resistant steel are your best bet, said Carey Litteer, executive vice president of CUTCO Cutlery. They take and hold a sharp edge longer than low-carbon steel and will not rust or discolor like high-carbon steel.
“Today’s high-carbon stainless steels used to manufacture fine cutlery provide the best balance between hardness, stain resistance and toughness,” Mr. Litteer said. “We believe all three of these properties are absolutely required for home kitchen uses.”
Cutting edges – Different culinary tasks call for different knives. For chopping and mincing you’ll need a straight-edge knife, like a Santoku Knife, Vegetable Knife or French Chef Knife. Slicing tomatoes? A recessed-edge utility knife like the Trimmer is ideal. A recessed edge is one in which the cutting edge is recessed back from the edge of the blade to protect it from coming into contact with ceramic plates and other dulling surfaces.
Construction – Knives with a full tang – the steel extends the full length of the knife, into the handle – are strong and balanced. A partial tang is fine on knives that don’t see a lot of heavy action, like a Table Knife, but a full tang on a French Chef Knife, for example, is a must.
Handle – A comfortable, ergonomic handle that fits right or left, small or large hands is something you should demand in a set of quality knives. Molded thermoresin is durable and more hygienic than wood, and triple rivets ground flush with the handle will ensure durability, comfort and cleanliness
Storage – Proper storage is essential for your safety and that of your knives. Cutlery that rattles around with other utensils in a drawer gets dull and damaged. Store knives in a block that sits on your counter or in trays that fit in a drawer or hang on the wall. Those options keep your knives from being damaged and your hands from being cut by reaching into a crowded drawer.
